Easy Peasy Avocado Bites

These crunchy little bites are a fantastic for little eaters or for parents eaten on their own or stuffed in a sandwich.

PREPARATION: 2 MIN | COOKING: 10-15 MIN | MAKES: 1 cup


Ingredients


1 cup frozen avocado chunks

¼ cup vegetable oil

¼ cup parmesan cheese

¼ cup hemp hearts or bread crumbs

¼ teaspoon garlic powder

Optional: ½ teaspoon lemon/lime zest

Directions

  • Preheat oven to 400°F. Line a baking sheet with aluminum foil.

  • In a bowl, stir the frozen avocado pieces with the oil until well coated.

  • In another bowl, stir together the rest of the ingredients.

  • Using a slotted spoon or a fork, transfer the avocado pieces to the parmesan cheese mixture. Stir quickly.

  • While transferring the avocado bites to the baking sheet, shake off loose pieces of coating. Scatter the pieces so they don't overlap.

  • Bake for 10 minutes. Serve right away.
