I love burritos but sometimes I just don’t have shells around plus my toddler has a tough time chewing tortillas anyway. Here is an easy weekday recipe the kiddos and you will love because they can mix and match toppings to their taste.
I like to make the meat topping the night before for quicker assembly the next day.
Ingredients
Base:
Cooked rice or quinoa or a 3:1 mix of rice to quinoa (my fav)
Meat topping:
1 pound lean ground turkey or chicken, thawed if frozen
2 onions, sliced or shredded
2 garlic cloves, chopped
1 carrot, shredded
1 cup canned chickpeas, rinsed and drained then fork mashed
½ cup jarred salsa
Chopped cilantro, to taste (optional)
Chili and cumin powder to taste
Other topping ideas:
Shredded cheese
Chopped tomatoes
Sliced green onion
Refried beans
Sour cream or plain yogurt
Leftover chopped roasted veggies or jarred roasted red pepper
Avocado slices or guacamole

Directions
Cook the rice or quinoa.
Meanwhile, fry the first four meat topping ingredients in a large frying pan continually breaking up the meat.
Once cooked, use a clean spatula to add in the rest of the ingredients.
Cook for a few minutes until the flavours have melded together.
Assemble bowls!
